Date-Sweetened Pumpkin Pie (No Refined Sugar)
Pumpkin pie is mostly sugar holding pumpkin together. Swap that sugar for Medjool dates and the pie gets something white sugar never gave it: a deep caramel note that sits right alongside the cinnamon and ginger. We grow the dates, so here is the version we make every November — no refined sugar, no condensed milk, and a filling that sets exactly like the classic.

Why dates work in pumpkin pie
A soft Medjool is already most of the way to caramel. Soaked in warm milk and blended, it becomes a smooth, thick date cream that does two jobs: it sweetens the custard and adds body, so the filling sets firm without extra thickeners. You get the same slice-able pie, with a darker, rounder sweetness. Soft, fresh-crop dates blend to silk; old, hard dates leave the filling gritty, so use the softest fruit you can find.

Ingredients (one 9-inch pie)
- 1 unbaked 9-inch pie crust, homemade or store-bought
- 12 jumbo Medjool dates (about 1 packed cup, 200 g), pitted
- ¾ cup whole milk or evaporated milk, hot
- 1 can (15 oz) pure pumpkin purée — not pie filling
- 2 large eggs plus 1 yolk
- 1 tsp vanilla extract
- 1 tsp ground cinnamon, ½ tsp ground ginger, ¼ tsp nutmeg, ⅛ tsp ground cloves
- ½ tsp fine salt
Method
- Soak the dates. Pit the dates, cover them with the hot milk and let them sit 10 minutes until very soft.
- Blend the date cream. Blend dates and milk until completely smooth, about 1 minute. Scrape down and blend again — any lumps now will show in the pie.
- Make the filling. Add the pumpkin, eggs, yolk, vanilla, spices and salt to the blender and pulse just until combined.
- Heat the oven. Set it to 425°F with a rack in the lower third. Put the crust on a baking sheet.
- Bake hot, then low. Pour in the filling and bake 15 minutes at 425°F. Lower to 350°F and bake 35–45 minutes more, until the edges are set and the center still jiggles slightly.
- Cool completely. At least 2 hours on a rack before slicing; it finishes setting as it cools. Refrigerate after that.
Farmer’s tip: taste the filling before the eggs go in. If you like a sweeter pie, blend in two more dates. Every batch of fruit is a little different, and that is the point of real fruit.
Serve it right
