The Date Shake: A Coachella Valley Farm’s Secret Recipe
The date shake is the Coachella Valley’s official dessert — tourists drive Highway 111 hunting them, and everyone from Palm Springs to Dateland has a version. Most of them make the same mistake: chunks. Here’s how a date farm makes one, including the step every roadside stand skips.

The farm secret: milk first, ice cream second
Everyone dumps dates, milk, and ice cream in together and blends — and gets sweet vanilla with date gravel at the bottom. The trick that changes everything:

- Blend the dates with the milk alone first. 6–8 pitted Medjool + about ¾ cup milk, blitzed a full minute until you have a smooth, milky date paste — no chunks, pure caramel through and through.
- Then add the ice cream — 3 big scoops of vanilla — and pulse just until combined.
- Adjust with a splash more milk until it’s your concentration: spoon-thick or straw-friendly, your call.
Milk first turns the dates into the flavor of the shake. Everything-at-once turns them into debris in the shake. That’s the whole secret, free of charge.
The farm recipe (2 tall shakes)
- 6–8 fresh Medjool dates, pits out (soft fresh fruit blends clean — old dry dates are why shakes get gritty)
- ¾ cup milk to start + more to adjust
- 3 scoops vanilla ice cream
- Optional valley moves: pinch of cinnamon, tiny pinch of salt, a shot of espresso for the adults
Why fresh dates make or break it
A shake is a soft-fruit recipe.
