Medjool Date Syrup

This homemade Medjool date syrup is a natural, unrefined sweetener made from just dates, water, and a squeeze of lemon. It has a rich caramel depth that works beautifully stirred into coffee, drizzled over oatmeal, blended into smoothies, or used in baking wherever honey or maple syrup is called for. One batch takes under 35 minutes and keeps for two weeks in the refrigerator.

Ingredients

  • 2 cups pitted Medjool dates (about 16–18 dates)
  • 2 cups water
  • 1 teaspoon fresh lemon juice (optional, brightens flavor)

Instructions

  1. Simmer the dates.
    In a medium saucepan, combine the pitted dates and water. Bring to a boil over medium heat, then reduce to low and simmer for 20 minutes until the dates are very soft and the liquid has darkened.
  2. Blend.
    Transfer to a high-speed blender or use an immersion blender directly in the pot. Blend until completely smooth, about 1–2 minutes.
  3. Strain.
    Pour through a fine mesh strainer or cheesecloth over a bowl, pressing with a spoon to extract all the liquid. Discard the solids (or stir them into oatmeal).
  4. Finish and cool.
    Stir in the lemon juice if using. Let cool completely before pouring into a sealed jar.
  5. Store.
    Refrigerate in an airtight jar for up to 2 weeks. The syrup thickens slightly when cold — this is normal. Stir before using.

Notes

Thicker syrup: Simmer uncovered for an extra 5–10 minutes to reduce further.

Substitution ratio: Use date syrup as a 1:1 substitute for honey or maple syrup in most recipes.

No blender: Mash the softened dates with a fork before straining — the result is slightly less smooth but equally delicious.
