The two dates every serious baker keeps on hand, in one box: 4 lbs of soft jumbo Medjool (the paste-maker — blends into caramel-sweet date paste for bars, energy bites, and sugar-free baking) and 2 lbs of golden Zahidi (the chop-and-fold date — firm enough to dice into loaves, cookies, and granola without turning to mush).
