Stuffed Dates with peanut butter

These stuffed dates with peanut butter are a five-minute no-bake snack that feels indulgent but is made entirely from whole ingredients. Creamy nut butter, chopped dark chocolate, and a pinch of sea salt turn a single Medjool date into something that tastes like dessert. Ingredients

  • 10 Medjool dates, pitted
  • Natural peanut butter (or any nut or seed butter)
  • 15 g / 0.5 oz dark chocolate (70% cacao), coarsely chopped
  • Coarse sea salt

Instructions

  1. Pit the dates.
    Make a lengthwise slit along each date and carefully remove the pit.
  2. Fill with peanut butter.
    Place a heaped teaspoon of peanut butter inside each date and gently press the sides together.
  3. Top and serve.
    Sprinkle each stuffed date with chopped chocolate and a small pinch of coarse sea salt. Serve immediately or refrigerate for up to one week.

Notes

Nut-free option: Sunflower seed butter or tahini works beautifully as a substitute.

Make ahead: Store in an airtight container in the refrigerator for up to 7 days.

Chocolate drizzle: Melt the chocolate and drizzle it over the top for a cleaner presentation.
