Ingredients (Makes ~20 bites)

  • 1.5 cups jumbo California Medjool dates, pitted (about 12–15 dates)
  • 1 cup rolled oats (use certified gluten-free oats if needed)
  • 1/2 cup raw almonds
  • 1/2 cup raw pistachios (shelled)
  • 1/4 cup natural almond butter or tahini
  • 2 tablespoons unsweetened cocoa powder (optional, for a chocolate version)
  • 2 tablespoons chia seeds or ground flaxseed
  • 1 teaspoon ground cardamom (hayl, Ω‡ΩŠΩ„) or 1 teaspoon ground cinnamon
  • 1/2 teaspoon vanilla extract
  • A pinch of sea salt
  • Optional rolling coatings: shredded unsweetened coconut, crushed pistachios, or sesame seeds

Instructions

  1. Toast the nuts (optional but recommended). Place almonds and pistachios in a dry skillet over medium heat for 4–5 minutes, stirring frequently. Let cool fully. Toasting deepens the flavor significantly.
  2. Pulse the nuts. Add cooled almonds and pistachios to a food processor. Pulse 8–10 times until coarsely chopped. Transfer to a large bowl.
  3. Process the dates and oats. Add pitted dates, oats, almond butter or tahini, cocoa powder (if using), chia seeds, cardamom or cinnamon, vanilla, and salt to the food processor. Process for 60–90 seconds until the mixture forms a sticky, cohesive dough.
  4. Combine. Add the chopped nuts to the food processor and pulse 5–6 times to incorporate. The mixture should hold together when pressed between your fingers. If too dry, add another date or a teaspoon of water; if too wet, add another tablespoon of oats.
  5. Roll into bites. Use a tablespoon or small cookie scoop to portion the dough. Roll each portion between your palms into a smooth ball about 1 inch in diameter.
  6. Coat (optional). Roll each bite in shredded coconut, crushed pistachios, or sesame seeds for a polished finish.
  7. Chill. Place bites on a parchment-lined plate and refrigerate for at least 30 minutes to firm up before serving.

Variations

  • Chocolate-cardamom (Khaleeji style): Add 2 tablespoons cocoa powder and use cardamom. Roll in cocoa powder.
  • Coconut-vanilla: Skip the cocoa, double the vanilla, and roll in shredded coconut.
  • Sesame-honey (Levantine): Use tahini instead of almond butter, add 1 tablespoon honey, and roll in toasted sesame seeds.
  • Chocolate-tahini: Use tahini, add 2 tablespoons cocoa powder, and roll in cocoa.
  • South Asian–inspired: Add 1/2 teaspoon cardamom, a pinch of saffron, and a tablespoon of rose petals or rose water.
  • Higher protein: Add 1/4 cup vanilla halal-certified protein powder (whey or plant-based). Add an extra tablespoon of nut butter to compensate for dryness.

Storage
