Medjool Candy Bar Bites

These Medjool date candy bar bites are a two-bite treat that satisfies chocolate cravings without refined sugar or artificial ingredients. A Medjool date is filled with almond butter, dipped in dark chocolate, and finished with flaky sea salt. Keep a batch in the freezer and they are ready whenever you need them.

Ingredients

  • 20 Medjool dates, pitted
  • ½ cup natural almond butter (or peanut butter)
  • 1 cup dark chocolate chips or melting wafers (70% cacao or higher)
  • ½ cup unsweetened shredded coconut (optional)
  • Flaky sea salt, for topping

Instructions

  1. Fill the dates.
    Make a lengthwise slit in each date and remove the pit. Fill each with about 1 teaspoon of almond butter and press the sides gently to close.
  2. Roll in coconut (optional).
    Roll each filled date in shredded coconut and place on a parchment-lined baking sheet.
  3. Melt the chocolate.
    Melt the chocolate chips in a microwave in 30-second increments, stirring between each, until smooth. Or use a double boiler over low heat.
  4. Dip and finish.
    Using a fork, dip each date in the melted chocolate, letting excess drip off. Return to the parchment sheet and sprinkle with flaky sea salt.
  5. Chill and store.
    Refrigerate for at least 20 minutes until the chocolate sets. Store in the freezer for up to 3 months or in the refrigerator for up to 2 weeks.

Notes

Nut-free: Sunflower seed butter or tahini works in place of almond butter.

No coconut: Skip the rolling step — the chocolate shell alone is delicious.

Serving: Best served cold straight from the refrigerator or freezer. They soften quickly at room temperature.
