Minerals in Dates: What’s Actually in the Fruit — From a Farm That Grows on Mineral Water
Dates are one of the most mineral-dense fruits you can eat — that’s not farm marketing, it’s USDA data. Potassium, magnesium, copper, manganese, iron: a handful of dates carries more of them than almost any other fruit on the shelf. We grow Medjool and Zahidi dates in Sky Valley, California, on the desert’s famous mineral water, so we get asked about this constantly. Here’s the honest breakdown — what’s proven about the fruit, what’s true about our water, and where we draw the line between the two.

The mineral content of dates (USDA numbers)
Per 100 grams of Medjool dates — about four of ours — USDA FoodData Central lists roughly:
We grow these. Golden Zahidi Dates — Nutty, Less Sweet, Never Sticky | California Farm-Direct from our family farm in Sky Valley, California — from $15/lb, shipping included. See them →
| Mineral | Per 100 g (~4 dates) | % Daily Value |
|---|---|---|
| Potassium | ~696 mg | ~15% |
| Copper | ~0.36 mg | ~40% |
| Magnesium | ~54 mg | ~13% |
| Manganese | ~0.3 mg | ~13% |
| Calcium | ~64 mg | ~5% |
| Iron | ~0.9 mg | ~5% |
| Zinc | ~0.44 mg | ~4% |
Two of those numbers surprise people. Gram for gram, dates carry nearly twice the potassium of a banana — the fruit everyone names first for potassium. And that copper figure is quietly one of the highest of any common fruit. This is simply what a date is: a palm spends a full desert summer concentrating everything it draws from the ground into a small, dense fruit, and when the fruit cures, the water leaves and the minerals stay.
Why dates are so mineral-dense
A date starts life as khalal — crisp, yellow, mostly water. By the time it’s a soft tamr date in a box, most of that water has left the fruit, on the palm, under the sun. Nothing was added; everything was concentrated. That’s the whole trick, and it’s also why date sugar — which is just the whole dried fruit, ground — keeps the full mineral panel, where refined sugar keeps none of it.
The water our palms drink

Here’s our part of the story. Our grove sits in the Sky Valley–Desert Hot Springs thermal basin — the stretch of desert where a homesteader digging on Miracle Hill in 1913 found two aquifers side by side: one cold and sweet enough that the town’s drinking water has won international taste awards, one naturally hot and mineral-laden, famous enough that a spa town grew on top of it and people cross the world to soak in it. Around here it’s always had a simpler name: healing water.
Our wells come up on the hot, mineral side of that basin, and date palms — almost alone among crops — thrive on exactly that water. So our palms spend the year drawing up the water people travel to bathe in, and turning it into fruit. The full story of our ground and water is here.
The honest line
Now the part most farms would skip. Does mineral-rich irrigation water make the fruit itself measurably richer in minerals? Soil and water chemistry do shape a fruit’s mineral makeup — that’s established agronomy, and it’s part of why the same variety tastes different from different ground. But we haven’t put our own crop through a lab panel against anyone else’s, so we won’t claim our dates out-mineral the table above. What we can prove is the fruit: the USDA numbers are any Medjool’s floor, ours included. What we can’t prove, we don’t claim. We grow dates; we don’t make medical claims, and a Medjool isn’t medicine — it’s just one of the most mineral-dense fruits there is, grown on water with a hundred-year reputation.
Getting the minerals without the refining
If minerals are why you’re here, the order of operations is simple: the whole fruit keeps everything — soft jumbo Medjool or golden Zahidi. Date sugar is the whole fruit ground up, so it keeps the panel too. Date syrup keeps a good share. Everything more refined than that keeps less.
