Maamoul: Date-Filled Cookies for Eid & Easter, From a Date Farm

Maamoul (معمول) are the molded, date-stuffed semolina cookies that mean “the holiday is here” across the Levant — baked for Eid al-Fitr in Muslim homes, for Easter in Arab Christian homes, and for holidays in Syrian Jewish kitchens too. One cookie, three tables. The dough gets the glory, but anyone who grew up on maamoul knows the truth: the cookie is only as good as the date filling. That’s where a date farm comes in — we grow Medjool and Zahidi in California’s Coachella Valley, and this is our maamoul.

Soft California Medjool dates from Desert Sun Dates — the filling for date maamoul cookies
The filling is the cookie: soft, fresh dates make maamoul worth the work.

The date filling (the part that matters)

Makes enough for ~24 cookies

  • 1 lb soft Medjool dates, pitted (about 20–24 jumbos) — or Zahidi, warmed and blended, for a less sweet filling
  • 2 tbsp soft butter (or neutral oil)
  • ½ tsp cinnamon, plus a pinch of ground mahlab or cardamom if your family uses it

Blitz everything to a smooth paste (fresh, soft dates need no soaking — that’s the farm advantage; the full technique is in our 5-minute date paste method). Roll into 24 small balls. If your dates have gone firm, ten minutes in a warm oven brings them back.

The semolina dough

  • 2 cups fine semolina
  • 1 cup all-purpose flour
  • 1 cup (2 sticks) butter, melted
  • ¼ cup sugar
  • 1 tsp instant yeast (optional, for a lighter crumb)
  • ¼ cup orange blossom water, rose water, or milk — whatever your family’s bottle is
  1. Rub the melted butter into the semolina, flour and sugar until sandy. Rest 30 minutes (overnight, covered, is traditional and better).
  2. Bring together with the blossom water or milk into a soft, moldable dough — it should press together without cracking.
  3. Fill: take a walnut of dough, hollow it in your palm, tuck in a ball of date filling, and seal.
  4. Shape: press into a maamoul mold and tap out — or hand-shape and crimp a pattern with a fork. The pattern isn’t decoration; it tells a mixed tray apart (dates traditionally get the round domed shape).
  5. Bake at 350°F for 15–18 minutes until the bottoms are golden and the tops barely colored. Don’t brown them — pale is correct.
  6. Dust with powdered sugar once cool (Easter trays almost always; Eid trays to taste).

Make-ahead: maamoul keep a week sealed at room temperature and freeze beautifully for months — most families bake the holiday batch early on purpose.
