What Is Date Sugar? A Date Farmer Explains (Use It, Make It)
Date sugar is the most literal product in the sweetener aisle: whole dried dates, ground into granules. One ingredient. It’s not extracted, refined, or crystallized from anything — it IS the fruit, fiber and all — the whole mineral panel included — which is exactly why it behaves differently from every other sugar in your pantry. We grow dates in the Coachella Valley, where ground-date “crystals” have been a date-garden staple since the 1950s; here’s what date sugar actually does, where it fails, and how to make your own.

The one rule: it never melts
Cane sugar dissolves and caramelizes. Date sugar doesn’t — it’s ground fruit, so it softens and disperses but keeps a fine speckle. That single fact decides everything:
We grow these. Golden Zahidi Dates — Nutty, Less Sweet, Never Sticky | California Farm-Direct from our family farm in Sky Valley, California — from $15/lb, shipping included. See them →
Where it shines:
- Crumbles, streusels, and crisp toppings (arguably better than brown sugar — deeper flavor, same texture job)
- Oatmeal, yogurt, smoothie bowls — anywhere you’d sprinkle
- Spice rubs for pork, chicken, and ribs (it chars beautifully without turning to candy)
- Muffins, quick breads, and cookies that tolerate a rustic crumb — swap 1:1 by volume, expect slightly less sweetness and a toffee note
Where it fails: anything that needs sugar to dissolve or go glassy — meringues, caramel, candy, sweetened drinks (it settles into sludge at the bottom of the glass), and light-colored batters where the specks show. For those, use date syrup or blended date paste instead — our baking-with-dates conversion guide maps which form goes where.
Make your own date sugar
Commercial date sugar is usually made from drier varieties — and that’s your cue at home. Our golden Zahidi is the one we’d grind: firmer and less sticky than Medjool, so it dries fast and grinds clean. Soft Medjool can gum up a grinder; it would rather be syrup or paste.
- Slice pitted dates thin and lay them on a parchment-lined tray.
- Dry at your oven’s lowest setting (or a dehydrator) 6–12 hours, door cracked, until the slices snap rather than bend. Fully brittle is the whole trick.
- Grind in a food processor or blender in pulses, with a spoonful of oat flour if your kitchen runs humid.
- Sift, regrind the coarse bits, and jar it airtight. Keeps for months in the pantry.
Date sugar, date syrup, or date paste?
- Sugar (ground dried fruit) — sprinkles, toppings, rubs, 1:1 dry swap
- Syrup (simmered and strained) — drizzles, drinks, dressings, anywhere honey goes
- Paste (blended whole fruit) — the baker’s workhorse: bars, energy bites, dense cakes, and the only form that keeps all the fiber
All three start the same place: good fruit. A sweetener made of nothing but dates is only as good as the dates.
