Chocolate Date Bark: The Viral Recipe, From an Actual Date Farm
Date bark is the rare viral recipe that deserved it: Medjool dates smashed flat, a layer of nut butter, a sheet of dark chocolate, flaky salt, freezer. It eats like a candy bar and reads like a fruit bowl — four ingredients, no oven, fifteen minutes of work. We grow Medjool dates in the Coachella Valley, and this is how we make it at the farm, plus the two things most versions get wrong.

Why Medjool is the only date for bark
Bark needs a date that smashes into a soft, fudgy layer — that’s a fresh, soft Medjool. Dry fruit cracks instead of flattening and turns the bark crumbly. If your dates have gone firm in the pantry, ten minutes in a warm (not hot) oven or a quick steam brings them back — but starting with soft current-harvest Medjool is the whole game. One 2 lb box makes about three trays.
We grow these. Golden Zahidi Dates — Nutty, Less Sweet, Never Sticky | California Farm-Direct from our family farm in Sky Valley, California — from $15/lb, shipping included. See them →
The recipe
Makes one quarter-sheet tray · 15 minutes active · 1–2 hours in the freezer
- 20–24 jumbo Medjool dates (about 1 lb), pitted
- ½ cup peanut butter or almond butter (the natural, pourable kind)
- 8 oz dark chocolate (chips or a chopped bar)
- 1 tsp coconut oil (optional — makes the chocolate snap thinner)
- Flaky salt
- Line a sheet pan with parchment.
- Tear and smash. Split each pitted date open, lay it flat on the parchment, and press with your fingers or the back of a cup into one connected layer, edges touching. Think cobblestones, not gaps.
- Spread the nut butter over the date layer in a thin, even coat.
- Melt the chocolate (30-second microwave bursts, stirring, with the coconut oil) and pour it over, spreading to the edges.
- Salt while the chocolate is wet.
- Freeze 1–2 hours until the chocolate sets hard, then break or cut into shards.
The second thing most versions get wrong: serving it from the fridge. Bark is best straight from the freezer — the dates stay chewy (they never freeze hard), the chocolate snaps, and it keeps for three months. That’s not a compromise; it’s the right way to eat it. Here’s why dates and freezers get along so well.
Variations from the farm kitchen
- “Snickers” bark — scatter roasted salted peanuts over the nut butter before the chocolate goes on.
- Pistachio-tahini — swap tahini for the nut butter, top with crushed pistachios. The least sweet version, and our favorite with coffee.
- Coconut-almond — almond butter, toasted coconut flakes on the wet chocolate.
- Less-sweet base — use our golden Zahidi for the bottom layer. Firmer and nuttier, closer to a cookie base than fudge; chop rather than smash.
Make it a thing people unwrap
Bark shards in a tin travel well and look intentional — if you’re building a food-gift box, this plus a bag of whole dates covers it. (We also pack gift boxes with a handwritten note, if you’d rather the farm do the packing.) For more date-first party food, see our stuffed dates three ways and the rest of the recipe library.
