Semi-dry dates are firmer, chewier and milder than the soft, sticky dates most people know. They hold their shape when you slice, chop or bake them. Golden Zahidi is the semi-dry date we grow on our farm in Sky Valley, California.

Soft, semi-dry and dry: the three kinds of dates

Growers group dates by how much moisture the ripe fruit holds.

  • Soft dates (Medjool is the best known) are moist, sticky and rich, with a caramel flavor. See how to pick good Medjool.
  • Semi-dry dates (Zahidi and Deglet Noor are the common ones) have a firmer, chewier flesh and a lighter, nuttier sweetness.
  • Dry dates are hard and fibrous, traditionally a staple food in some regions, and rarely seen in American stores.

Where a date falls on that scale decides almost everything: how it tastes, how it cuts, how it bakes and how long it keeps.

What a semi-dry date is like to eat

A ripe Zahidi has a thin golden skin and a chewy interior. The flavor is mild and nutty, with butterscotch and dried-apricot notes. It isn’t sticky, so it won’t cling to your fingers, your knife or the inside of a lunchbox. Many people who find Medjool too rich prefer it, which is the subject of our page on dates less sweet than Medjool.

What semi-dry dates are good for

  • Baking. They stay as distinct pieces in cookies, breads, bars and scones instead of dissolving into the batter. Start with our Zahidi date bars and bread and the guide to which date to bake with.
  • Chopping. They cut cleanly and don’t glue themselves to the knife, which makes granola, oatmeal toppings and salads easy.
  • Savory dishes. Tagines, grain salads and stuffing, where a very sweet date would take over.
  • Cheese boards and trail mix. They’re not sticky, so they travel and plate well. See dates for charcuterie boards.
  • Storage. Less moisture means they keep well. See our farm storage method, and dates also freeze well.

Quick answers

Are Zahidi dates semi-dry?
