Most people reach for Medjools because that is the date they know, and then wonder why the pieces vanished into the crumb. Medjool and Zahidi behave completely differently under heat, and picking the wrong one is the single most common date-baking mistake.

Use Zahidi when you want to see the dates

Zahidi are golden, firm and lower in moisture, with a flavor closer to brown butter and roasted cashew than to caramel. Chopped into a cookie dough or a quick bread they stay as distinct pieces you can bite. They also chop cleanly, which anyone who has tried to dice a Medjool will appreciate.

Use Medjool when you want the dates to disappear

That is not a criticism — melting is exactly what you want for date paste, date caramel, sticky toffee pudding, or blending into a smoothie or energy ball. Medjools are also the right choice when you are replacing refined sugar, because they break down completely.

Rough substitution: about 1 cup of packed date paste for 1 cup of sugar, and cut the other liquid in the recipe by roughly a quarter.

Two things worth knowing before you bake

  • Our dates have pits. Whole fruit keeps better and bruises less. Budget a few minutes to pit them — a knife tip down the seam and the pit lifts straight out.
  • Soak only if they have dried out. Ten minutes in hot water rescues a stiff date. Fresh ones do not need it, and soaking a soft Medjool just makes it watery.
